You have probably had our ham by now! We start with fresh pork leg from our partner ranch, Payne Family Farms. We bone them out but keep the whole ham in its natural form. We brine them in all natural brown sugar, kosher salt, and water -the old-fashioned way- and smoke them over 100% applewood for a sweet smokey flavor. You may have seen them showcased in Portland Monthly during the holidays. This is your chance to wow your family and friends with the best natural ham around!
If you celebrate with Spring Lamb, then we have the best lamb in the region! Hawley Ranch raises a small flock on open pastures, here in the Willamette Valley. We are ready to get you just the lamb roast you are looking for! Hawley Ranch lamb is tender and sweet, from their 100% open pasture diet of sweet Oregon grass and forage. We are happy to trim them up in a trasditional bone-in roast, or bone them and tie them for your easy carving. We are also bringing in fresh rack of lamb, and loin, if you are looking for something even more special!
