Believe it or not, Spring is almost here!  It is time to plan out your Spring feast.  Whether your family celebrates with fresh Hawley Ranch Leg of Lamb, or Payne Family Farms Applewood-smoked Ham, we have just the roast you need!

You have probably had our ham by now!  We start with fresh pork leg from our partner ranch, Payne Family Farms.  We bone them out but keep the whole ham in its natural form.  We brine them in all natural brown sugar, kosher salt, and water -the old-fashioned way- and smoke them over 100% applewood for a sweet smokey flavor. You may have seen them showcased in Portland Monthly during the holidays.  This is your chance to wow your family and friends with the best natural ham around!

 

If you celebrate with Spring Lamb, then we have the best lamb in the region!  Hawley Ranch raises a small flock on open pastures, here in the Willamette Valley.  We are ready to get you just the lamb roast you are looking for!  Hawley Ranch lamb is tender and sweet, from their 100% open pasture diet of sweet Oregon grass and forage.   We are happy to trim them up in a trasditional bone-in roast, or bone them and tie them for your easy carving.  We are also bringing in fresh rack of lamb, and loin, if you are looking for something even more special!

Hams are made from Payne Family Farms pigs slaughtered, butchered, brined, and
smoked at our own companion Revel Meats facility in Canby, Oregon, just south of
Portland. They are perfect for glazing, roasting, and carving for the family!
Holiday Special! $13/LB on ALL FULL and HALF Hams! Full ham 8-11 LBs, 1/2
ham 4-5.5 LBs.
Sweetheart Hams, made with brined and smoked pork knuckle, are smaller
and leaner than standard hams. Perfect for an intimate family gathering or a big family
that wants a little of everything! 2-3LBs each, $13/LB

 

Danish Pork Roast was our hottest seller for Christmas. Boneless center or
rib loin, with scored skin attached that gets crispy as you roast it! Ask for traditional
(parallel horizontal scoring pattern) or our preferred cross-cut scoring pattern!
2-5 LBs per roast, $9/LB for Rib Loin (more marbled), $10/LB for Center Loin (leaner
cut). You could get it skin-off too, but this is more fun! Order by Sunday, March 25.

 

Beef Tenderloin Roast works well for a smaller, more intimate family meal.
Roasts are generally 2-3LBs, $24/LB

 

Lamb is also pasture-raised and sourced from the Hawley Ranch.

Brisket like all our beef, comes from Hawley Ranch pasture-raised,
grass-fed and grass-finished dry-aged beef. Full briskets are 8-10LBs, but
you can also order just the flat (4-5LBs) or the point (4-5LBs) We have only
3 full briskets to sell, so call early! $8/LB

 

Beef Braising Cuts are a great alternative to brisket. Perfect slow-
cooked in beef stock and red wine or beer. Ask about Chuck Roast
($6/LB), Neck Roast ($5/LB), Beef Shanks ($7/LB), and Short Ribs
($8/LB)

Whole Chickens come from Mary’s, and are pasture-raised and air-
chilled. Available whole or parted out, 4-5LBs, $3.5/LB
Chicken Stock perfect for Matzoh Ball Soup, will be $5/quart.
Most orders will be ready for pickup by 3PM on Thursday, March 29.
Some will be ready earlier in the week. Please ask!
